Thanks again to Deborah Cohen for more Chamber of Horrors (woooooooh, scary!!!). This one is pretty good - a Blue-footed Booby from the Galapagos. Although this species is not on the Northern Irish list it still got the chef at Chez Veale salivating. He doesn't know a lot about boobies but he says he would most likely prepare it in the style of his Michelin star rated Gannet Stew. However, one like that pictured below would need to mature for another couple of weeks and it would be just perfect!
